Ingredients
  

For the marinade

  • 1 cup unsweetened pineapple juice adds moisture and sweetness
  • 1/2 cup brown sugar, packed provides sweetness and caramelization
  • 1/2 cup soy sauce offers depth and savory flavor
  • 1/4 cup ketchup adds tanginess and richness
  • 2 tbsp fresh ginger, grated contributes spice and warmth
  • 2 tbsp fresh garlic, minced enhances flavor with a sharp note
  • 1 tbsp sesame oil adds nuttiness and smoothness

For the chicken and garnish

  • 2 lbs boneless skinless chicken thighs, cut into 1.5-inch chunks tender and juicy
  • 2 cups steamed white rice, long-grain serves as a comforting base
  • 3 stalks green onions, sliced provides fresh crunch
  • 1 tbsp white sesame seeds, toasted adds a nutty finish

Instructions
 

Preparation

  • In a medium bowl, combine the pineapple juice, soy sauce, brown sugar, ketchup, grated ginger, minced garlic, and sesame oil. Whisk until the sugar starts to dissolve.
  • Reserve 1 cup of the marinade for later use.
  • Place the chicken in a resealable plastic bag and pour the remaining marinade over it. Seal the bag tightly and refrigerate for at least 2 hours or overnight.

Cooking

  • In a saucepan, pour the reserved marinade and bring to a gentle simmer over medium heat. Cook for 8-10 minutes until thickened.
  • Thread the marinated chicken onto skewers, leaving space between pieces. Preheat your grill to medium-high heat.
  • Grill the chicken skewers for 12-15 minutes, turning and basting with the reserved marinade every 3 minutes.
  • Remove from grill and let the skewers rest for a few moments.
  • Serve the skewers over steamed white rice, garnished with sliced green onions and toasted sesame seeds.

Notes

For best results, marinate chicken overnight and ensure proper grill temperature. Use fresh ingredients, and soak wooden skewers in water before grilling.
