Basic Roasted Chicken Thighs

  • 1.5 lbs chicken thighs bone-in or boneless
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika or garlic powder
  • 1 lemon sliced, optional
  • 1 tsp dried oregano optional

Instructions
 

  • Remove chicken thighs from the fridge and let them rest at room temperature for 20–30 minutes.
  • Preheat oven to 425°F (220°C). Pat chicken dry with paper towels.
  • Place chicken on a baking sheet or oven-safe dish. Drizzle with olive oil and season with salt, pepper, paprika (or garlic powder). Add lemon slices and oregano if using.
  • Bake for 25–30 minutes, flipping halfway through, until golden and internal temperature reaches 165°F (74°C).
  • Let rest for 5 minutes before serving. Enjoy with rice, salad, or veggies.

Notes

Try different flavors—honey soy glaze, buffalo sauce, or lemon-thyme. Add to wraps, salads, or bowls. For crispier skin, finish under broiler. Cook from room temperature for best results.
