Instructions
 

Cooking the Chicken

  • Heat the olive oil in a skillet over medium heat. Add the chicken breasts and cook until browned on all sides, about 5-7 minutes.
  • Reduce heat and add butter, letting it melt into the chicken. Stir in the minced garlic and cook for about a minute.
  • If using, sprinkle in the red chili flakes. Pour in the lemon juice and scrape the bottom of the skillet.
  • Add salt and black pepper, stirring well to distribute.

Cooking the Rice

  • In a separate pot, combine white rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer until rice is tender, about 15 minutes.

Combining Ingredients

  • Once the rice is cooked, stir in the heavy cream and grated parmesan cheese until creamy and well combined.
  • Combine the chicken mixture with the creamy rice and stir well. Allow to warm through for a couple of minutes.
  • Portion the mixture into bowls and sprinkle with fresh parsley before serving.

Notes

Customize with different toppings or serve with a salad for added freshness. Leftovers make great lunches or quick snacks.
