Ingredients
  

For the Chicken Marinade

  • 2 large boneless, skinless chicken breasts (or 4 small)
  • 2 tablespoons honey adds sweetness and moisture
  • 2 limes Juice and zest of provides acidity and brightness

  • 2 cloves garlic, minced adds savory depth
  • 1 teaspoon ground cumin provides warmth and earthiness

  • ¼ teaspoon black pepper adds a touch of heat

For the Mango Salsa

  • 1 large ripe mango, diced brings sweetness and texture
  • ¼ cup red onion, finely chopped adds crunch and sharpness
  • 1 small jalapeño, seeded and minced (optional for heat)
  • 2 tablespoons fresh cilantro, chopped adds freshness
  • 1 lime Juice of for added tartness
  • Salt and pepper, to taste for seasoning

Instructions
 

Preparation

  • In a mixing bowl, combine the honey, lime juice, lime zest, olive oil, minced garlic, ground cumin, smoked paprika, salt, and black pepper. Whisk until well blended.
  • Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over them, ensuring an even coating. Seal or cover and marinate in the refrigerator for at least 30 minutes.
  • In a separate mixing bowl, combine the diced mango, red onion, minced jalapeño, cilantro, and lime juice for the salsa. Toss gently until mixed.

Cooking

  • Heat a large skillet over medium-high heat and add the marinated chicken, cooking undisturbed until golden brown.
  • Flip the chicken and continue cooking until the internal temperature reaches 165°F.
  • Remove the chicken from the skillet and let it rest on a cutting board for a few minutes before slicing.

Serving

  • Serve the sliced chicken warm, topped generously with the fresh mango salsa.

Notes

Marinate the chicken for at least 30 minutes. Let chicken rest after cooking. Adjust lime juice in salsa for taste.
