For the Topping

  • 1 piece avocado, diced creamy texture

Instructions
 

Preparation

  • Season the chicken breasts with salt and pepper on both sides and set aside.
  • In a small bowl, combine honey, lime juice, lime zest, minced garlic, and ground cumin; whisk until mixed.
  • Pour marinade over the seasoned chicken, allowing to marinate for about 10 minutes.
  • Rinse jasmine rice under cold water until it runs clear and drain well.

Cooking

  • In a pot, bring chicken broth to a boil, then add rinsed jasmine rice, reduce heat, and cover; cook for 15-20 minutes.
  • In a skillet, heat olive oil over medium heat, add marinated chicken, cooking 6-8 minutes per side until golden brown and cooked through.
  • Let chicken rest for a few minutes before slicing.

Assembly

  • In a large bowl, combine diced avocado, red onion, and cilantro; toss gently.
  • On a plate, layer cooked rice, top with sliced chicken, and finish with the avocado mixture.
  • Serve with lime wedges on the side.

Notes

For best results, avoid overcrowding the skillet when cooking chicken and allow it to rest after cooking. Use fresh lime juice for optimal flavor and adjust seasoning to your taste.
