  • 8 pieces bone-in and skin-on chicken (drumsticks, thighs, breasts) provides moisture and flavor
  • 4 ripe peaches, pitted and cut in half optional, adds fresh sweetness

Preparation

  • In a mixing bowl, combine the peach preserves, minced garlic, olive oil, soy sauce, Dijon mustard, cayenne pepper, salt, and black pepper. Whisk until smooth.
  • Place chicken pieces in a large baking dish. Pour the peach marinade over the chicken, ensuring all pieces are evenly coated. Let marinate for at least 30 minutes.
  • Preheat your oven.

Cooking

  • Arrange the marinated chicken pieces on a baking sheet, skin side up, with space between each piece. Brush the tops with additional olive oil.
  • Bake the chicken until cooked through and golden brown, approximately 30-40 minutes. Ensure juices run clear and temperature is safe.
  • If using peaches, place the peach halves on the baking sheet during the last 10 minutes of cooking.
  • Remove chicken from the oven and let it rest for about 5 minutes.
  • Serve the chicken with roasted peaches and sliced avocado.

Notes

For deeper flavor, marinate chicken longer. Use an instant-read thermometer to check doneness. Choose ripe peaches for maximum sweetness.
