Preparation

  • Begin by preparing the chicken thighs. Pat them dry with paper towels to remove excess moisture, ensuring a good sear.
  • In a mixing bowl, combine the minced garlic, honey, soy sauce, lime juice, cayenne pepper, and salt. Blend until it forms a smooth marinade.
  • Place the chicken thighs into the bowl with the marinade, ensuring they are well-coated. Let marinate for at least 15 minutes, longer if possible.

Cooking

  • Preheat your oven or skillet to medium heat.
  • Cook the chicken thighs for about 5-7 minutes on the first side until they start to release from the pan and the skin turns golden-brown.
  • Flip the chicken and continue cooking for an additional 5-7 minutes until fully cooked through. Test for doneness by cutting into the thickest part of the thigh.

Notes

Use fresh lime juice for the best flavor. Let the chicken rest after cooking to retain moisture. Consider marinating overnight for deeper flavor.
