Preparation

  • Soak the wooden skewers in water for at least 30 minutes to prevent burning.
  • Cut the boneless, skinless chicken breasts into uniform 1-inch cubes.
  • In a mixing bowl, combine the olive oil, paprika, garlic powder, kosher salt, and black pepper to form a smooth marinade.
  • Add the chicken cubes to the marinade and toss them thoroughly to coat evenly.
  • Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece.

Cooking

  • Preheat your grill or grill pan to medium-high heat.
  • Grill the skewers for approximately 10 to 15 minutes, turning occasionally until the chicken is cooked through and golden brown.
  • In a mixing bowl, combine mayonnaise, Thai sweet chili sauce, Sriracha, and honey to prepare the sauce.
  • Remove the chicken skewers from the grill and check that the internal temperature has reached 165°F.
  • Serve the skewers on a platter, drizzling the sauce on top or serving it on the side for dipping.

Notes

Soak the skewers adequately to prevent burning. Ensure the chicken is cut evenly for consistent cooking. Adjust the Sriracha to your taste preference.
