  • 2 Tbsp olive oil, divided for cooking and moisture
  • 12 oz green beans, trimmed adds color and crunch
  • 1/4 cup green onions, chopped for freshness and garnish
  • 1/4 cup chicken broth provides moisture and flavor
  • 3 Tbsp low-sodium soy sauce adds umami
  • 1/4 cup honey adds sweetness
  • 4 cloves garlic, minced provides robust garlic flavor
  • 1/2 tsp grated ginger, or 1/4 tsp ground ginger adds warmth and spice
  • 2 tsp arrowroot powder, or cornstarch to thicken the sauce further

Instructions
 

Preparation

  • Cut the boneless skinless chicken breasts into roughly 1-inch pieces.
  • In a bowl, combine the chicken pieces with 1 tablespoon of arrowroot powder (or cornstarch), garlic powder, onion powder, salt, and black pepper. Toss until the chicken is evenly coated.

Cooking

  • Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes.
  • Remove the chicken and set it aside. In the same skillet, add the remaining tablespoon of olive oil and sauté the green beans for about 3-4 minutes until bright green and slightly tender.
  • Add the cooked chicken back to the skillet along with the chopped green onions, chicken broth, soy sauce, honey, minced garlic, and grated ginger. Stir to combine.
  • Sprinkle the additional 2 teaspoons of arrowroot powder (or cornstarch) over the mixture and stir until the sauce thickens, about 1-2 minutes.
  • Taste and adjust seasoning if necessary.

Serving

  • Serve hot, garnished with sesame seeds if desired.

Notes

For best results, ensure even cooking by cutting chicken pieces uniformly and sautéing green beans until bright and crunchy. Adjust honey for sweetness to preference.
