Honey BBQ Chicken Rice

  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces tender and juicy
  • 1 cup long-grain white rice, rinsed and drained provides structure
  • 2 cups low-sodium chicken broth adds moisture
  • 1/2 cup BBQ sauce mesquite flavor works best, brings smoky sweetness
  • 1/4 cup honey adds sweetness and gloss
  • 1 cup mixed vegetables (frozen peas, carrots, corn, or bell peppers) provides color and nutrition
  • 2 tbsp vegetable or olive oil, divided for cooking
  • 1 tsp garlic powder enhances flavor
  • 1 tsp onion powder adds depth
  • 1/2 tsp smoked paprika contributes a smoky flavor
  • 1/2 tsp salt, plus more to taste boosts flavor
  • 1/4 tsp black pepper adds warmth
  • 2 pieces green onions, sliced optional for garnish, adds freshness

Instructions
 

Preparation

  • Heat 1 tablespoon of vegetable or olive oil in a large skillet over medium heat.
  • Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  • In the same skillet, add the remaining tablespoon of oil and stir in the rinsed and drained rice. Sauté for a couple of minutes.
  • Pour in the chicken broth, stir to combine, and bring to a gentle simmer. Cover the skillet with a lid.
  • After 10 minutes, add the cooked chicken, BBQ sauce, honey, mixed vegetables, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir until evenly coated.
  • Cover again and let cook for an additional 5-7 minutes until the vegetables are tender and everything is heated through.
  • Taste and adjust seasoning with extra salt, if necessary. Serve warm, garnished with sliced green onions if desired.

Notes

To enhance flavors, allow the dish to rest for a few minutes after cooking. Store leftovers in an airtight container for up to four days.
