Ingredients
  

For the Marinade

  • 2 tablespoons canola oil divided for moisture and cooking
  • 3 cloves garlic, minced for flavor
  • 1 medium onion, diced for sweetness and moisture
  • 1.5 cups Texas style BBQ sauce for moisture and flavor
  • 3 tablespoons honey for sweetness
  • 3 tablespoons whole grain Dijon mustard for tang and flavor
  • 1 teaspoon reduced sodium soy sauce for umami
  • 1 teaspoon coarsely ground black pepper for spice
  • 0.5 teaspoon ground ginger for warmth

  • 2 pounds boneless skinless chicken breasts, cut into 1-inch chunks main protein source

Instructions
 

Preparation of Marinade

  • Heat 1 tablespoon of canola oil in a small saucepan over medium heat. When the oil is hot, add the minced garlic and diced onion. Stir occasionally until the onion is translucent and soft, about 3-4 minutes.
  • Stir in the BBQ sauce, honey, mustard, soy sauce, black pepper, and ginger. Allow this mixture to bubble gently, then reduce the heat and let simmer for 3-5 minutes.
  • Remove from heat and let the sauce cool for about 10 minutes.

Marinating Chicken

  • In a gallon-sized Ziploc bag, combine the chicken with half of the cooled BBQ sauce mixture. Seal and massage the bag to coat the chicken.
  • Marinate for at least 2 hours, ideally overnight, turning the bag occasionally.

Grilling

  • Before grilling, drain the chicken from the marinade, discarding the marinade.
  • Preheat your grill to medium-high heat.
  • Thread the marinated chicken onto skewers and brush with the remaining tablespoon of canola oil, then sprinkle with salt and pepper.
  • Grill chicken skewers for about 10-12 minutes, turning occasionally until the chicken is cooked through and reaches an internal temperature of 165°F.
  • During the last 1-2 minutes of grilling, brush the skewers with the remaining BBQ sauce mixture.
  • Serve immediately with reserved BBQ sauce for dipping.

Notes

For best results, let the chicken marinate longer, ensure your grill is preheated, and discard all marinade that has been in contact with raw chicken. Consider adding vegetables like bell peppers or zucchini to the skewers.
