Ingredients
  

  • 2 cups all-purpose flour or 00 flour if available
  • 3 large eggs
  • 1/2 tsp salt

Instructions
 

  • On a clean surface, make a mound with the flour. Create a well in the center and crack the eggs into the well. Add salt.
  • Using a fork, begin to whisk the eggs, slowly incorporating the flour from the sides until a dough forms.
  • Knead the dough by hand for about 10 minutes until smooth and elastic. Wrap in plastic and let rest for 30 minutes at room temperature.
  • Once rested, roll the dough thin using a rolling pin or pasta machine. Cut into desired shapes such as fettuccine or tagliatelle.
  • Boil in salted water for 2–3 minutes until al dente. Serve with your favorite sauce.

Notes

You can freeze cut pasta by dusting with flour and storing in layers. Fresh dough lasts about 2 days in the fridge. Add a little olive oil to dough if desired, but it's not essential.
