Main Ingredients

  • 1 pound ground chicken (93 or 94% lean) the main protein source
  • 1 tablespoon avocado or olive oil, divided for sautéing, adds moisture

Instructions
 

Preparation

  • In a small bowl, mix together the chili powder, cumin, paprika, garlic powder, oregano, salt, and black pepper.
  • Heat ½ tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the sliced bell peppers and red onion into the skillet and lightly season with salt to taste.
  • Sauté the vegetables, stirring occasionally, until softened and slightly charred, about 5 to 7 minutes.
  • Once softened, transfer the vegetables to a plate and set aside.
  • In the same skillet, add the remaining ½ tablespoon of olive oil and then ground chicken. Cook for 6 to 8 minutes, breaking it up as it cooks.
  • Drain excess liquid or fat from the skillet.
  • Sprinkle the seasoning mixture over the chicken and stir to coat evenly.
  • Add 1 to 2 tablespoons of water to the skillet and stir well.
  • Return the sautéed peppers and onions to the skillet and stir to combine, cooking for an additional 1 to 2 minutes.
  • Serve your fajitas with your favorite toppings such as guacamole, sour cream, shredded cheese, or salsa.

Notes

These fajitas can be versatile and enjoyed in various ways including breakfast with eggs, snacks in lettuce wraps, or family dinners in low-carb tortillas. They can last in the refrigerator for 3-4 days and can be frozen for up to three months.
