Instructions
 

Preparation

  • Begin by cooking the elbow macaroni according to the package instructions until al dente. Drain and set aside.
  • In a large skillet over medium heat, add the shredded chicken and pour in the sugar-free BBQ sauce and honey. Stir to coat the chicken and heat until warmed through.
  • Reduce the heat and mix in the fat-free evaporated milk. Stir until combined smoothly.
  • Add the cooked macaroni to the skillet and mix thoroughly to coat the pasta.
  • Gradually sprinkle in the shredded light cheddar and cream cheese, stirring continuously as the cheese melts.
  • Season with salt and pepper to taste, stirring and adjusting to your liking.
  • Transfer to a baking dish if desired, top with additional cheese, and broil for a few minutes until bubbly and golden.

Notes

Mix in a bit of pasta cooking water if the sauce is too thick. Use high-protein pasta to increase protein content. Add spices for extra flavor. Broil for a golden layer on top.
