Instructions
 

Preparation

  • Preheat your oven to 350°F.
  • In a mixing bowl, combine the shredded cooked chicken, enchilada sauce, and optional add-ins. Mix until well combined.

Assembly

  • Take a tortilla and place a spoonful of the chicken mixture in the center. Roll the tortilla around the filling.
  • Place the rolled enchiladas seam-side down in a baking dish.
  • Pour enchilada sauce over the rolled enchiladas and sprinkle cheese on top.

Baking

  • Bake in the preheated oven until the cheese is melted and bubbly, approximately 20-25 minutes.
  • Remove from the oven and let sit for a few minutes before serving.

Notes

Use evenly shredded chicken for better mixing. Warm tortillas briefly if using corn to prevent cracking. Don’t skip the resting time to enhance texture.
