  • 1 lb 3–4 boneless, skinless chicken breasts About 3-4 breasts depending on size

Creamy Dressing

  • 1 cup thick Greek yogurt Adds creaminess
  • 2 tbsp olive oil Adds richness
  • 2 cloves garlic, minced Adds aromatic flavor
  • 2 tbsp fresh dill, chopped Adds freshness
  • Juice of 1 lemon Balances flavor

Salad Base

  • 4 cups mixed greens or lettuce Serves as a base
  • 1 medium cucumber, finely diced Provides crunch

Instructions
 

Preparation

  • Rinse and pat dry the chicken breasts, then season lightly with salt and pepper.
  • Grill or pan-sear the chicken over medium heat until golden-brown and fully cooked through, then set aside to cool.

Dressing and Salad Assembly

  • In a mixing bowl, combine the Greek yogurt, minced garlic, fresh dill, lemon juice, and olive oil. Whisk until smooth and creamy.
  • Once the chicken is cooled, cut it into bite-sized pieces.
  • Dice the cucumber finely.
  • In a large bowl, combine the diced chicken, cucumber, and the yogurt dressing. Gently toss everything together until well coated.
  • Place the mixed greens or lettuce on individual plates then spoon the creamy chicken mixture over the top.
