For the Chicken

  • 2 lbs chicken thighs, boneless and skinless rich and tender
  • 1/2 tsp fine sea salt enhances flavor
  • 1 cup flat-leaf parsley, finely chopped freshness and color
  • 4 cloves garlic, finely minced aromatic depth
  • 1/3 cup extra virgin olive oil moisture and richness
  • 2 1/2 Tbsp red wine vinegar tangy acidity
  • 1/2 tsp dried oregano herbal note
  • 1/4 tsp freshly ground black pepper subtle warmth
  • 1/4 tsp crushed red pepper flakes mild heat

Instructions
 

Marination

  • Begin by placing the chicken thighs in a large mixing bowl. Gently sprinkle the fine sea salt over the chicken.
  • Finely chop the flat-leaf parsley and add it to the bowl with the chicken.
  • Mince the garlic cloves and incorporate them into the chicken mixture.
  • Pour the extra virgin olive oil into the bowl, coating the chicken pieces.
  • Add the red wine vinegar to the mixture.
  • Sprinkle in the dried oregano, freshly ground black pepper, and crushed red pepper flakes.
  • Gently combine all the ingredients in the bowl using your hands or a spatula.
  • Cover the bowl with plastic wrap and place it in the refrigerator to marinate for at least 30 minutes.

Cooking

  • Preheat your oven or a skillet over medium-high heat.
  • Place the marinated chicken thighs in the heated skillet or baking dish.
  • Cook the chicken until browned on the outside and fully cooked through.
  • Remove the chicken from the heat and let it rest for a few minutes.
  • Prepare your mango salsa while the chicken rests.
  • Slice the chicken thighs and serve them warm accompanied by fresh mango salsa.

Notes

Marinate the chicken longer for deeper flavor penetration. Use fresh ingredients for the best taste, especially in the salsa.
