Main Ingredients

  • 1 lb ground chicken provides protein and a tender texture
  • 3 tbsp extra-virgin olive oil or avocado oil adds moisture and richness
  • 2 cups broccoli florets, chopped adds crunch and color
  • 1 medium red pepper, sliced for sweetness and texture
  • 1 cup large carrots, sliced offers sweetness and crunch
  • 2 cloves garlic, minced enhances flavor with a savory punch
  • 1 tsp fresh ginger, minced or grated adds warmth and depth of flavor

  • ½ cup chicken bone broth or water adds moisture
  • ½ cup coconut aminos for a savory, slightly sweet flavor
  • 1 tbsp honey balances flavors with its sweetness
  • 2 tsp toasted sesame oil adds richness and a nutty aroma
  • 2 tbsp arrowroot starch thickens the sauce for a better consistency

Instructions
 

Cooking the Chicken

  • Add 1 tablespoon of oil to a large skillet and heat it over medium heat.
  • Once the oil is warm, add the ground chicken and break it apart with a spatula. Cook until the chicken is fully browned and no longer pink, about a few minutes. Remove the chicken from the skillet and set aside.

Cooking the Vegetables

  • In the same skillet, add the remaining 2 tablespoons of oil and increase the heat to medium-high.
  • Add the chopped broccoli, sliced red pepper, and carrots. Stir frequently until the vegetables are tender but still a bit crisp.
  • During the last minute of cooking, add in the minced garlic and ginger, stirring them in quickly.

Making the Teriyaki Sauce

  • In a separate bowl, whisk together the chicken bone broth (or water), coconut aminos, honey, and toasted sesame oil.
  • In another small bowl, combine the arrowroot starch with 2 tablespoons of cold water to create a slurry.

Combining Everything

  • After the vegetables have finished cooking, return the cooked ground chicken to the skillet.
  • Pour the teriyaki sauce and the arrowroot slurry over the chicken and vegetables. Lower the heat to a gentle simmer for about 3-5 minutes, watching for the sauce to thicken.
  • Finally, add the raw cashews by mixing them into the stir fry or sprinkling them on top as you serve.

Notes

Serve over rice, rice noodles, or in lettuce wraps for a lighter option. Leftovers can be used for quick snacks or light meals.
