Instructions
 

Preparation

  • Chop the lettuce into bite-sized pieces and place it in a large mixing bowl.
  • Cook the Greek marinated chicken breast until fully cooked, then let it rest before slicing it into strips.
  • Slice the tomatoes and cucumber into even, thin slices.

Assembly

  • Add sliced chicken on top of the lettuce.
  • Add sliced tomatoes, cucumber, and Kalamata olives to the bowl.
  • Crumble feta cheese over the salad.
  • In a small bowl, whisk together the dressing ingredients: black pepper, sugar, olive oil, red wine vinegar, kosher salt, dried oregano, and minced garlic.
  • Drizzle the dressing over the salad just before serving and gently toss to combine.

Notes

For best results, use fresh ingredients and marinate chicken long enough for maximum flavor absorption. Serve dressing on the side if expecting leftovers to keep the salad fresh.
