  • Add the chopped dill, dried oregano, kosher salt, and ground black pepper to the mixture and stir until thoroughly integrated.
  • With wet hands, form the chicken mixture into patties about 4 to 5 inches in diameter.

Cooking

  • Heat the extra virgin olive oil in a skillet or grill pan over medium heat until shimmering.
  • Place the patties in the pan, avoiding overcrowding, and cook for about 5 to 6 minutes until a golden-brown crust forms.
  • Flip the patties gently and cook for another 5 to 6 minutes, ensuring they reach an internal temperature of 165°F.

Notes
