  • 2 tbsp olive oil
  • 1 medium onion diced
  • 3 carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 8 cups chicken broth
  • 2 cups shredded cooked chicken
  • 2 cups egg noodles
  • 1 tsp dried thyme
  • 1 bay leaf
  • salt and pepper to taste
  • fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large soup pot over medium heat. Add onion, carrots, and celery. Sauté for 5–6 minutes until softened and slightly golden.
  • Stir in garlic, thyme, and bay leaf. Cook for 1 minute until fragrant.
  • Pour in chicken broth and bring to a gentle boil, scraping the bottom of the pot for extra flavor.
  • Add shredded chicken. Reduce heat and simmer for 15 minutes to blend flavors.
  • Add egg noodles. Cook 8–10 minutes until tender but not mushy.
  • Remove bay leaf. Taste and adjust seasoning with salt, pepper, or lemon juice.
  • Stir in fresh parsley and serve hot with bread or crackers.

Notes

Optional swaps: Use rice or orzo instead of noodles. Add spinach or zucchini for more vegetables. Freeze without noodles for best results.
