Ingredients
  

Base Ingredients

  • 1.5 lb boneless skinless chicken breasts or thighs
  • 8 cups chicken broth
  • 3 carrots sliced
  • 3 celery stalks chopped
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 bay leaves
  • 1 tsp dried thyme
  • salt and pepper to taste
  • 2 cups egg noodles
  • fresh parsley for garnish

Instructions
 

  • Place chicken, broth, carrots, celery, onion, garlic, bay leaves, thyme, salt, and pepper into your crockpot. Stir gently to combine.
  • Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is fully cooked and vegetables are tender.
  • Remove the chicken from the crockpot and shred with two forks. Return the shredded chicken to the soup.
  • Stir in the egg noodles during the last 20–30 minutes of cooking. Let them cook until tender but not mushy.
  • Remove bay leaves, taste the broth, and adjust seasoning if needed. Garnish with fresh parsley and serve warm.

Notes

For added nutrition, stir in spinach or peas during the last 15 minutes of cooking. Freeze leftovers without noodles and add fresh pasta when reheating.
