Ingredients
  

Soup Base

  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 carrots sliced
  • 2 celery ribs sliced
  • 3 cloves garlic minced
  • 8 cups low-sodium chicken broth
  • 2 boneless skinless chicken breasts
  • 2 cups egg noodles
  • 1 bay leaf
  • 1 tsp dried thyme or 2 sprigs fresh
  • salt and black pepper to taste

Garnish

  • fresh parsley chopped, for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5–7 minutes until softened. Add garlic and cook for 1 minute.
  • Pour in chicken broth. Add bay leaf, thyme, salt, and pepper. Bring to a boil.
  • Add chicken breasts. Reduce heat, cover, and simmer for 20 minutes until chicken is fully cooked.
  • Remove chicken, shred with two forks, then return to pot.
  • Add egg noodles and simmer for 8–10 minutes until tender.
  • Taste and adjust seasoning. Add a splash of lemon juice for brightness, if desired.
  • Garnish with chopped fresh parsley and serve warm.

Notes

To freeze, leave out the noodles and add them fresh when reheating. For gluten-free, use rice noodles or pasta. Fresh herbs like parsley or dill brighten the flavor beautifully.
