For the Chicken

For the Salad

  • 8 cups romaine lettuce, chopped base structure
  • 1 cup black beans, drained and rinsed protein and fiber

  • ½ cup pickled onions tangy flavor

For the Dressing

  • 3 tablespoons apple cider vinegar tanginess
  • 2 tablespoons honey natural sweetness
  • 1 tablespoon dijon mustard sharpness
  • 2 cloves garlic, finely minced or pressed pungent flavor
  • ¼ teaspoon salt seasoning
  • ¼ teaspoon pepper seasoning
  • ½ cup extra virgin olive oil rich texture

Instructions
 

Preparation

  • Season the chicken breasts with kosher salt, pepper, smoked paprika, garlic powder, and brown sugar.
  • Cook the seasoned chicken on a grill or stovetop pan over medium-high heat for 5-7 minutes on each side until golden brown and cooked through.
  • Rest the chicken for a few minutes after cooking.
  • Grill the corn for about 10 minutes, turning occasionally, then slice the kernels off the cob.

Assembly

  • In a mixing bowl, combine the chopped romaine lettuce, black beans, cherry tomatoes, and corn.
  • Dice the grilled chicken and add it to the bowl with the salad ingredients. Pour the BBQ sauce over and mix gently.
  • For the dressing, whisk together apple cider vinegar, honey, dijon mustard, minced garlic, salt, pepper, and olive oil.
  • Drizzle the dressing over the salad mixture and toss gently.
  • Top with grated cheese, pickled onions, green onions, and chives before serving.

Notes

For best results, use fresh ingredients, adjust BBQ sauce to taste, and mix the salad just before serving to maintain crispness. Store leftovers separately.
