Ingredients

  • 2 cups cooked chicken breast shredded
  • 4 cups romaine or kale chopped
  • 0.5 cup dried cranberries
  • 0.5 cup sliced almonds or pecans toasted, optional
  • 1 crisp apple thinly sliced
  • 2 green onions chopped

Dressing Ingredients

  • 3 tbsp soy sauce or tamari
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp honey or maple syrup
  • 1 tsp fresh ginger grated
  • 0.5 tsp garlic minced

Instructions
 

  • Chop romaine or kale and place into a large salad bowl to form the base.
  • Add shredded chicken over the greens to make it hearty enough for a full meal.
  • Top with dried cranberries, apple slices, green onions, and shredded carrots for flavor and texture.
  • In a jar or small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic until well blended.
  • Pour dressing over the salad, sprinkle with almonds or pecans, and toss until evenly coated. Serve immediately.

Notes

This salad can be prepped ahead by storing ingredients separately and tossing with dressing just before serving. Try feta or goat cheese, sunflower seeds, or roasted chickpeas for variation. Great as a light main or colorful side for Thanksgiving.
