Chicken Ingredients

  • 2 pounds boneless, skinless chicken thighs main protein, juicy and tender
  • 1 teaspoon kosher salt for the chicken, enhances overall taste
  • ½ teaspoon black pepper for the chicken, adds warmth
  • ½ teaspoon chili powder contributes a subtle kick
  • 2 tablespoons extra virgin olive oil for cooking the chicken, adds moisture

Vegetable Ingredients

  • 1 medium jalapeno pepper, thinly sliced adds fresh heat
  • 2 yellow peaches pitted and sliced adds natural sweetness

Instructions
 

Preparation

  • In a large mixing bowl, combine the peach preserves, extra virgin olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Mix until smooth.
  • Slice the yellow peaches and set aside.
  • Add the chicken thighs to the bowl with the glaze and toss until evenly coated.
  • Drizzle a sheet pan with extra virgin olive oil to prevent sticking.

Cooking

  • Place the coated chicken thighs on the prepared sheet pan in a single layer.
  • Scatter the sliced jalapeno and peach slices around the chicken.
  • Bake in a preheated oven until the chicken is golden-brown and cooked through.

Notes

Allow the dish to rest for a few minutes after baking to let the juices redistribute. Use fresh peaches for improved flavor, but canned can work if fresh aren’t available.
