Preparation

  • Begin by heating a large pan over medium heat and adding 1 tablespoon of vegetable oil along with the ground chicken and diced water chestnuts.
  • Cook until the chicken forms a good crust, watching for it to turn golden brown.
  • Once crusted, break the chicken apart using a spatula and ensure it cooks through evenly, about 2-3 minutes.

Cooking

  • After the chicken is fully cooked, add minced ginger, garlic, and crushed red pepper flakes to the pan.
  • Stir these ingredients into the chicken and let cook for about 10 seconds.
  • In a small bowl, combine the rice vinegar, soy sauce, hoisin sauce, water, sugar, and cornstarch, and whisk together until dissolved.
  • Pour the sauce into the pan with the chicken mixture and bring to a boil, stirring continuously until the sauce thickens and has a shiny glaze.
