Ingredients
  

For the Casserole Base

  • 0.5 tablespoon olive oil for sautéing
  • 1 pound ground chicken for protein
  • 1 packet taco seasoning for flavor
  • 15 oz pinto beans, canned, undrained for moisture
  • 10 oz diced tomatoes and green chiles, canned for acidity
  • 1 cup frozen roasted corn for sweetness and texture
  • 0.5 cup chicken broth or water for moisture
  • 6 pieces extra thin corn tortillas, cut into thin strips for structure
  • 4 oz shredded Mexican cheese for creaminess

Optional Seasonings

  • 2 tablespoons chili powder for added spice
  • 1 teaspoon kosher salt for seasoning
  • 1 teaspoon garlic powder for flavor
  • 1 teaspoon ground cumin for warmth
  • 1 teaspoon dried Mexican oregano for herbiness

Instructions
 

Cooking the Chicken

  • Start by heating the olive oil in a large skillet over medium heat.
  • Add the ground chicken and cook until no longer pink, about 5 to 7 minutes.

Adding Seasoning

  • Stir in the taco seasoning and cook for another minute.

Mixing Ingredients

  • Gently fold in the undrained pinto beans until combined.
  • Add the canned tomatoes and chiles, mixing well.
  • Stir in the frozen corn and then pour in the chicken broth or water.

Assembling the Casserole

  • Layer the cut corn tortillas at the bottom of a baking dish.
  • Spread half of the chicken and bean mixture over the tortillas.
  • Sprinkle half of the shredded cheese over the mixture.
  • Repeat with the remaining tortillas, chicken mixture, and top with the rest of the cheese.
  • If using optional seasonings, sprinkle them on top of the cheese.
  • Cover the baking dish with foil and bake in a preheated oven.

Notes

Let the casserole rest for a few minutes after baking for easier serving. Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months.
