Ingredients
  

For the breadcrumb topping

  • 1 tablespoon unsalted butter for richness
  • 1 cup panko breadcrumbs for crispiness
  • 1/4 teaspoon salt enhances flavor
  • 1/4 teaspoon garlic powder adds savory depth
  • 1/4 teaspoon onion powder provides sweetness
  • 1/4 teaspoon Italian seasoning for herbaceous flavor

For the chicken mixture

  • 1 tablespoon oil for sautéing
  • 1 small onion, diced adds sweetness and moisture
  • 1 teaspoon salt, divided in half for seasoning
  • 4 cloves garlic, roughly chopped boosts flavor
  • 2 pounds ground chicken main protein
  • 1 teaspoon garlic powder for extra savory flavor
  • 1 teaspoon onion powder adds sweetness
  • 1 teaspoon dried oregano for herbal notes
  • 770 mL marinara sauce 1 jar Rao's, serves as a savory base
  • 1 cup grated parmesan nutty and salty flavor
  • 2 sprigs basil for freshness
  • 1.5 to 2 cups shredded mozzarella cheese for creaminess and stretch

Instructions
 

Preparation

  • In a mixing bowl, combine the panko breadcrumbs, ¼ teaspoon of salt, garlic powder, onion powder, and Italian seasoning. Mix these ingredients until they’re evenly coated and set aside.
  • In a large skillet, melt the unsalted butter and add the oil over medium heat. Once hot, sauté the diced onion for about 3–5 minutes, or until it becomes translucent.
  • Add the chopped garlic and half of the teaspoon of salt. Stir and cook for another minute until fragrant.
  • Add the ground chicken, breaking it up with a spatula. Sprinkle with remaining salt, garlic powder, onion powder, and oregano. Cook until browned and fully cooked, about 7–10 minutes.
  • Pour the marinara sauce over the cooked chicken, combining well. Bring to a simmer and let warm through for a few minutes.

Layering and Baking

  • In a baking dish, layer half of the chicken and marinara mixture, sprinkle with half of the grated parmesan and top with some shredded mozzarella cheese.
  • Add the second half of the chicken meat mixture, followed by the remaining parmesan and mozzarella.
  • Preheat your oven to 375°F. Bake for about 25–30 minutes until the cheese is bubbly and lightly golden.

Serving

  • Remove from the oven and let cool slightly. Garnish with fresh basil leaves before serving.

Notes

This dish is perfect when served with a simple green salad and garlic bread. Leftovers can be reheated for a quick snack.
