Ingredients
  

For the Marinade

  • cup honey, preferably local adds sweetness and moisture
  • ¼ cup lime juice, freshly squeezed provides acidity and brightness
  • 2 tablespoons chili powder adjust to spice preference
  • 4 cloves garlic, minced boosts flavor and aroma
  • 2 tablespoons olive oil for marinade
  • 1 teaspoon salt use kosher if possible

For the Chicken

  • 2 lb chicken thighs, boneless and skinless tender and juicy
  • ¼ cup cilantro, chopped optional, adds freshness and color

Preparation

  • In a mixing bowl, combine the honey, freshly squeezed lime juice, chili powder, minced garlic, olive oil, and salt. Use a whisk to mix the ingredients until well blended.
  • Add the two pounds of boneless and skinless chicken thighs to the marinade, ensuring each piece is generously coated. Cover the bowl and let it marinate for at least 30 minutes at room temperature.

Cooking

  • Preheat your grill or grill pan over medium-high heat.
  • Remove the chicken from the marinade, letting any excess drip off. Place the chicken on the grill and close the lid.
  • Grill the chicken for about 6-7 minutes on one side before flipping.
  • After flipping, grill for another 6-7 minutes on the opposite side. Ensure the chicken reaches an internal temperature of 165°F.
  • Once cooked, remove the chicken from the grill and let it rest for about 5 minutes. Before serving, sprinkle with cilantro if desired.

Notes

For best results, let the chicken marinate for longer and ensure the grill is properly preheated. Always allow the chicken to rest after cooking to enhance juiciness.
