Instructions
 

Preparation

  • Cut each chicken breast into bite-sized pieces, ensuring uniformity for even cooking.
  • In a mixing bowl, combine the chicken with kosher salt and cracked black pepper. Toss to coat evenly.
  • Add the teriyaki sauce, stirring well to coat all the chicken pieces.
  • Pour in the pineapple juice and mix into the marinated chicken.
  • Prepare skewers by alternating marinated chicken with pineapple chunks, bell pepper pieces, and scallion sections.

Cooking

  • Preheat the grill or grill pan until hot.
  • Place skewers on the grill and cook for about 10-12 minutes, turning occasionally.
  • Look for the chicken to become golden and cooked through, with vegetables retaining some crunch.
  • Remove skewers from the grill and allow to rest for a few minutes before serving.
  • Serve warm, garnished with sesame seeds and fresh herbs.

Notes
