  • 2 lb chicken thighs, boneless, skinless Tender and juicy
  • 1/2 cup soy sauce Salty and savory
  • 2 mangos Sweet and juicy
  • 3 cloves garlic Aromatic flavor
  • 1/2 tsp fresh ginger, grated Spicy and fragrant
  • 2 tbsp water To adjust consistency
  • to taste Cilantro for garnish Fresh herb

Instructions
 

Preparation

  • Begin by placing the chicken thighs into a plastic bag or a large baking dish.
  • In a blender, combine the soy sauce, chopped mangos, garlic cloves, grated ginger, and water. Blend until smooth.
  • Reserve about 1/4 cup of the marinade for later use. Pour the remaining marinade over the chicken, ensuring it's well-coated.
  • Seal the bag or cover the dish and refrigerate for 2 to 8 hours.

Grilling

  • Preheat the grill to 400°F.
  • Remove the chicken from the marinade and shake off excess marinade.
  • Grill each side for about 6 to 7 minutes until cooked through, using reserved marinade to baste after flipping.
  • Remove from grill once cooked and garnished with cilantro.

Notes

Letting the chicken marinate for the full time enhances flavor, and ensure to preheat the grill for optimal cooking results.
