Instructions
 

Preparation

  • Start by preparing a marinade in a bowl. Combine the olive oil, minced garlic, lemon juice, and red pepper flakes.
  • Take the chicken breasts cut into long, even slices and place them in the bowl with the marinade. Toss gently until the chicken is well coated.
  • While the chicken marinates, prepare the cowboy butter by combining the softened butter, minced garlic, lemon zest, lemon juice, Dijon mustard, paprika, remaining red pepper flakes, chopped chives, salt, and pepper in a separate bowl. Whisk until creamy.

Grilling

  • Once the chicken is marinated for about 30 minutes, preheat the grill.
  • Thread the chicken slices onto skewers and place them on the hot grill.
  • Grill until an even char develops and the chicken is no longer pink, turning occasionally.
  • Halfway through grilling, brush the chicken skewers with the prepared cowboy butter.
  • Continue grilling until the chicken reaches an internal temperature of 165°F.
  • Remove the skewers from the grill and let them rest briefly.
  • Drizzle a bit more cowboy butter over the skewers just before serving.

Notes

For best results, marinate longer if possible. Use soaked wooden skewers to prevent burning. Customize the heat level by adjusting the red pepper flakes.
