Grilled Chicken Teriyaki Skewers

Ingredients
  

For the Marinade

  • cup brown sugar Adds sweetness to the sauce.
  • cup soy sauce Low sodium recommended.
  • 2 cloves garlic, minced Enhances flavor.
  • 1 tablespoon rice vinegar Adds acidity.
  • ½ tablespoon fresh ginger, minced Creates a warm, spiced flavor.
  • 1 tablespoon honey For extra sweetness.
  • ½ teaspoon sesame oil Imparts a nutty flavor.
  • 2 tablespoons cornstarch Thickens the sauce.
  • 1 cup water To dissolve cornstarch.

For the Chicken

  • 2 lbs chicken thighs (or breasts), cut into 1-inch cubes Main protein for the skewers.
  • 8 pieces skewers To hold the chicken.

Optional Toppings

  • to taste sesame seeds For garnish.
  • to taste chopped green onion For garnish.

Instructions
 

Prepare the Sauce

  • In a small bowl, combine the cornstarch with water, mixing until smooth.
  • In a medium saucepan, add the brown sugar, soy sauce, minced garlic, rice vinegar, minced ginger, honey, and sesame oil.
  • Pour in the cornstarch and water mixture and stir frequently while heating.
  • Bring the sauce to a simmer and stir regularly until it thickens and turns deep brown.
  • Remove from heat and allow to cool completely.

Marinate the Chicken

  • Place the cubed chicken in a large ziplock bag.
  • Pour half of the cooled teriyaki sauce over the chicken.
  • Seal the bag and gently shake to coat the chicken.
  • Marinate in the fridge for at least 30 minutes.

Grill the Skewers

  • Preheat your grill to medium heat and lightly oil the skewers.
  • Thread the marinated chicken onto the skewers.
  • Grill the skewers for 20 to 30 minutes, turning every 3 to 4 minutes.
  • Baste the skewers with the remaining teriyaki sauce during the last few minutes of grilling.
  • Check that the internal temperature of the chicken reaches 165 degrees Fahrenheit before serving.
  • Serve garnished with chopped green onion and sesame seeds, if desired.

Notes

For best results, marinate the chicken longer if possible and monitor the skewers on the grill to prevent charring.
