Preparation

  • Begin by cutting the boneless, skinless chicken breast into 1 1/2 inch cubes for even cooking.
  • In a bowl, combine the soy sauce, olive oil, honey, thyme, garlic, oregano, sage, black pepper, red pepper flakes, and bay leaf. Whisk until well combined.
  • Add the chicken cubes to the marinade, ensuring they are fully coated. Cover and marinate in the refrigerator for at least 30 minutes.

Prepare Vegetables

  • While the chicken marinates, prepare the vegetables by slicing the bell peppers, zucchini, and red onion, and peeling the garlic.

Assemble Skewers

  • Once the chicken is marinated, thread it onto skewers, alternating with bell peppers, zucchini, red onion, and garlic cloves.

Grilling
