For the Balsamic Reduction

  • 1/2 cup balsamic vinegar Adds tangy sweetness
  • 1.5 tbsp brown sugar Contributes sweetness for balance

Instructions
 

Preparation

  • Combine balsamic vinegar and brown sugar in a saucepan over medium heat and stir until reduced by half.
  • Pat the chicken breasts dry with a paper towel.
  • Mix Italian seasoning, garlic powder, onion powder, salt, and black pepper together.
  • Rub olive oil over the chicken breasts, coating them evenly with the seasoning mixture.

Grilling

  • Heat the grill to medium-high heat.
  • Grill the seasoned chicken breasts for about 6-7 minutes on each side until nicely browned and with grill marks.
  • Check that the internal temperature reaches 160°F.
  • Place a slice of mozzarella on each breast and cover the grill, cooking for an additional 2-3 minutes until the cheese is bubbly and the chicken reaches 165°F.

Serving

  • Transfer the chicken to a serving platter, arrange the tomato slices over the chicken, sprinkle with basil ribbons, and drizzle the balsamic reduction right before serving.

Notes

Serve with a side salad or grilled vegetables for a complete meal. Optionally, use fresh mozzarella for the best melt and flavor.
