For the chicken

  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil (for chicken)
  • 3 cloves garlic, minced (for chicken)
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • ½ teaspoon salt (for chicken)
  • ½ teaspoon black pepper (for chicken)

For the rice and broccoli

  • 3 cups cooked white or brown rice
  • 3 cups broccoli florets
  • 1 tablespoon olive oil (for broccoli)
  • ¼ teaspoon salt (for broccoli)
  • ¼ teaspoon black pepper (for broccoli)

For the creamy garlic sauce

  • 1 cup plain Greek yogurt
  • 3 cloves garlic, finely minced or grated (for sauce)
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil (for sauce)
  • ½ teaspoon salt (for sauce)
  • ¼ teaspoon black pepper (for sauce)

Instructions
 

Preparation

  • Rub chicken breasts with olive oil, minced garlic, paprika, onion powder, salt, and black pepper.
  • Preheat the grill or grill pan on medium heat.
  • Cook the chicken on the grill for about 6-7 minutes on each side until internal temperature reaches 165°F.
  • Prepare broccoli by boiling water and adding broccoli florets with olive oil, salt, and black pepper to steam.
  • Remove broccoli when bright green and tender but still crisp.
  • In a mixing bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, salt, and black pepper for the sauce.

Assembly

  • Start with a base of cooked rice, layer grilled chicken and steamed broccoli on top.
  • Drizzle creamy garlic sauce generously over each bowl.

Notes

Season chicken well and monitor cooking time to avoid overcooking. Store leftovers in an airtight container for up to three days.
