Preparation

  • Begin by preparing your chicken breasts. Rinse them under cold water and pat them dry with paper towels.
  • In a mixing bowl, combine the crushed garlic and olive oil. Stir well to evenly distribute the garlic throughout the oil.
  • Add the chicken breasts to the bowl with the garlic-olive oil mixture. Ensure each piece is well-coated and let marinate briefly.

Grilling

  • Preheat the grill or grill pan over medium-high heat. Carefully place the marinated chicken breasts on the grill.
  • Grill the chicken for about 6-7 minutes on one side without moving it for a good sear.
  • Flip the chicken breasts and continue grilling for another 6-7 minutes, checking for doneness.

Assembly

  • While the chicken is grilling, rinse the baby spinach and spin dry.
  • Once the chicken is cooked, let it rest before slicing into strips or bite-sized pieces.
  • Arrange the chicken over a bed of fresh spinach in serving bowls, then sprinkle with crumbled feta cheese.
  • Add sun-dried tomatoes and olives if using, then drizzle creamy garlic sauce on top.
  • Serve immediately while the chicken is warm.
