Main Ingredients

  • 1.5 pounds boneless skinless chicken breasts or thighs, cut into 1.5-inch cubes makes the main protein tender
  • 1 medium red onion, chopped into large chunks optional, adds sweetness and texture
  • 1 medium bell pepper, chopped into large pieces optional, adds color and crunch
  • 1 medium zucchini, sliced into thick rounds optional, provides additional texture

Instructions
 

Preparation

  • Combine the olive oil, fresh lemon juice, red wine vinegar, minced garlic, dried oregano, salt, black pepper, and paprika (if using) in a mixing bowl and whisk until well combined.
  • Add the diced chicken to the marinade, ensuring all pieces are well coated. Allow to marinate for at least 30 minutes.
  • Soak wooden skewers in water for about 30 minutes if using; metal skewers can be prepared directly.

Assembly and Cooking

  • Thread the marinated chicken pieces onto the skewers, alternating with vegetables as desired.
  • Preheat grill or grill pan over medium-high heat and place skewers on once hot.
  • Cook kabobs for about 10-15 minutes, turning them occasionally until chicken reaches an internal temperature of 165°F.
  • Let kabobs rest for a few minutes before serving to allow juices to redistribute.

Notes

For best results, marinate the chicken overnight and make sure to cut vegetables to similar sizes as the chicken. Rotate skewers during grilling for even charring.
