  • 1 medium red onion, chopped optional, adds sweetness
  • 1 each bell pepper, chopped optional, adds crunch
  • 1 each zucchini, sliced into thick rounds optional, brings moisture
  • 8 each wooden or metal skewers for easy grilling

Instructions
 

Preparation

  • In a mixing bowl, combine the olive oil, fresh lemon juice, red wine vinegar, minced garlic, dried oregano, salt, black pepper, and paprika if using. Whisk until well blended.
  • Cut the chicken into 1.5-inch cubes if not already done. Add the chicken pieces to the marinade, ensuring each piece is well-coated.
  • Prepare vegetables by chopping the red onion, bell pepper, and zucchini into large chunks or rounds.
  • Let the chicken marinate in the refrigerator for at least 30 minutes.

Grilling

  • Soak wooden skewers in water for about 30 minutes before grilling.
  • Skewer chicken and vegetables alternately on each skewer.
  • Grill the kabobs over medium heat for about 10 to 15 minutes, turning occasionally, until the chicken is cooked through and golden.
  • Remove from grill and let kabobs rest for a few minutes before serving.

Notes

For best results, cut chicken into uniform sizes for even cooking and allow marination longer than 30 minutes for richer flavor. Feel free to customize with different proteins and vegetables based on preference.
