Preparation

  • Gather all your ingredients. In a mixing bowl, combine the olive oil, minced garlic, lemon juice, and lemon zest. Whisk these together until blended.
  • Add the fresh oregano, thyme, and rosemary to the bowl. Stir until well combined.
  • Season the marinade with salt and black pepper. Stir to ensure even distribution.
  • Place the chicken breasts in a plastic resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated.
  • Seal the bag tightly, removing as much air as possible, or cover the dish with plastic wrap. Place in the refrigerator and marinate for at least 1 hour, up to 8 hours.
  • After marinating, remove the chicken from the refrigerator. It's ready to be cooked using your preferred method.

Notes

For best results, marinate the chicken longer for enhanced flavor. Use a meat thermometer to check for doneness at 165°F.
