  • 400 g spaghetti
  • 1/3 cup extra-virgin olive oil
  • 4 garlic cloves finely sliced
  • 1/2 tsp chili flakes optional
  • 250 g cherry tomatoes halved
  • 1/4 tsp sea salt flakes
  • 1/4 tsp cracked black pepper
  • 500 g raw prawns peeled and deveined
  • 1 tbsp fresh lemon juice
  • 1/2 cup chopped flat-leaf parsley
  • freshly grated parmesan optional, to serve

Instructions
 

  • Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Reserve 1 cup of pasta water and drain.
  • Warm olive oil in a skillet over low heat. Add sliced garlic and chili flakes. Cook gently until fragrant and golden, without burning.
  • Add cherry tomatoes, salt, and pepper. Cook until tomatoes soften and release juices. Press gently to help them burst.
  • Increase heat to medium and add prawns. Cook for 60–90 seconds per side until pink and just cooked through.
  • Add drained spaghetti and 1/2 cup reserved pasta water to the pan. Toss to coat in the sauce, adding more water as needed for a glossy finish.
  • Remove from heat. Stir in lemon juice and parsley. Taste and adjust seasoning if needed.
  • Serve hot, drizzled with more olive oil and sprinkled with Parmesan if using.

Notes

Use good-quality olive oil and fresh garlic for the best flavor. Skip chili for a milder version. Avoid freezing due to seafood texture. Best enjoyed fresh.
