  • 4 pieces boneless, skinless chicken breasts (approximately 1.5 pounds)
  • 4 cloves garlic (minced)
  • ½ cup grated Parmesan cheese adds nutty flavor and texture
  • ¼ cup olive oil provides moisture and richness
  • 2 tablespoons fresh parsley (chopped) for freshness and color
  • 1 tablespoon lemon juice adds brightness
  • 1 teaspoon salt enhances overall flavor
  • ½ teaspoon black pepper adds mild heat

Preparation

  • In a mixing bowl, combine the minced garlic, grated Parmesan cheese, olive oil, chopped fresh parsley, lemon juice, salt, and black pepper. Stir well until all ingredients blend evenly.
  • Place the chicken breasts in a large dish or a resealable plastic bag. Pour the marinade over the chicken, ensuring each piece is well coated.
  • Allow the chicken to marinate for at least 30 minutes; longer is preferable if time allows.

Cooking

  • Preheat your grill or grill pan over medium-high heat.
  • Remove the chicken from the marinade and discard any leftover marinade. Place the chicken on the grill with space between each piece.
  • Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  • Once done, remove the chicken from the grill and let it rest for a few minutes before slicing.

Notes

Serve with grilled vegetables or a fresh salad. Can also be used in wraps or pasta for meal prep.
