  • 1/4 cup grated mozzarella cheese optional, adds creaminess

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a spacious mixing bowl, combine the ground chicken, grated Parmesan cheese, breadcrumbs, chopped parsley, minced garlic, and beaten egg. Mix gently until well blended.
  • Add the dried oregano, salt, black pepper, and milk to the mixture. Lightly fold them into the meatloaf base.
  • Prepare a baking sheet by lining it with parchment paper or lightly greasing it with olive oil.
  • Divide the mixture into portions and shape them into small loaves, placing them on the prepared baking sheet.
  • If using mozzarella cheese, sprinkle it on top of each mini meatloaf.

Cooking

  • Place the baking sheet in the preheated oven. Cook until golden-brown, and the internal temperature reaches 165°F (74°C).
  • Once cooked, let the meatloaves rest for a few minutes before serving.

Notes

For the best results, avoid overmixing and ensure the ground chicken is fresh. Let the meatloaves rest after baking for juicier bites.
