Preparation

  • Start by patting the chicken thighs dry with paper towels to ensure the skin crisps up nicely while cooking.
  • Season both sides of the thighs with salt, pepper, and paprika to create a delicious crust.

Cooking

  • In a large skillet, heat the olive oil over medium-high heat until it shimmers slightly.
  • Carefully place the seasoned chicken thighs skin-side down in the skillet without crowding.
  • Cook the chicken thighs for about 7 to 10 minutes without moving them until the skin is a deep golden brown.
  • Flip the chicken thighs using tongs, and cook for another 5 to 7 minutes on the other side until browned.
  • Reduce heat to medium-low, add the butter, garlic, rosemary, and thyme to the skillet.
  • Stir gently, allowing the melted butter to coat the chicken thighs and mingle with the herbs and garlic.
  • Spoon the garlic herb butter over the chicken thighs as they cook for another 5 to 10 minutes until they reach an internal temperature of 165°F.
  • If using lemon juice, add it just before serving for added brightness.
  • Remove the skillet from heat and let the chicken rest for a few minutes before serving.

Notes

For best results, ensure the chicken is dry before seasoning, and allow it to rest after cooking. Adjust seasonings to taste before serving.
