Preparation

  • Start by bringing a large pot of salted water to a boil. Once boiling, add the bowtie pasta and cook according to the package instructions until al dente.
  • While the pasta cooks, heat a skillet over medium-high heat. Add 2 tablespoons of butter and 2 tablespoons of olive oil to the pan. Swirl them together until the butter has melted.
  • Add the chicken pieces to the skillet, making sure they are evenly spread out. Let them cook undisturbed for about 5-7 minutes until they are golden brown on one side.
  • Stir in the minced garlic, Cajun seasoning, garlic powder, onion powder, Italian seasoning, and black pepper. Cook for an additional minute until the garlic becomes fragrant.
  • Reduce the heat to medium and add the cubed Velveeta and softened cream cheese to the skillet. Stir carefully until both cheeses begin to melt and combine into a creamy sauce.
  • Pour in the heavy cream and chicken broth. Stir well to incorporate everything, allowing the sauce to thicken slightly as it heats.
  • When the pasta is done cooking, drain it in a colander and then add it directly to the skillet with the sauce. Gently toss everything together.
  • Sprinkle the shredded mozzarella and grated Parmesan cheese over the pasta and mix until the cheeses are melted and intertwined.

Notes

For best results, ensure chicken pieces are uniform in size and avoid rushing the browning process. Reserve pasta water to adjust the sauce consistency if needed.
