Chicken

  • 1.5 pounds boneless skinless chicken thighs (or breasts) Ensure chicken is trimmed and dry.

Spices

  • 1 teaspoon paprika Enhances flavor.
  • 1 teaspoon garlic powder Adds depth.
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

  • 2 tablespoons olive oil For frying the chicken.
  • 4 tablespoons unsalted butter Creates the garlic butter sauce.
  • 6 cloves garlic, minced Essential for the sauce.
  • 1 tablespoon fresh parsley, chopped (optional) For garnish.

Preparation

  • Begin by preparing the chicken. Pat the chicken dry with paper towels.
  • In a small bowl, mix together paprika, garlic powder, onion powder, salt, and black pepper. Sprinkle the mixture evenly on both sides of the chicken pieces.

Cooking

  • Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken, cooking undisturbed for about 5 to 7 minutes until browned.
  • Turn the chicken over and continue to cook for another 5 to 7 minutes until it reaches an internal temperature of 165°F.
  • Remove the chicken and cover loosely with foil to keep warm.
  • In the same skillet, reduce heat to medium and melt the butter, scraping up browned bits.
  • Add minced garlic to the butter and sauté until fragrant, about 1 to 2 minutes.
  • Return the chicken to the skillet, spooning garlic butter over it and simmering for a couple of minutes.
  • Sprinkle with fresh parsley before serving, if desired.

Notes

Serve with roasted vegetables, side salads, rice, or pasta. Store in an airtight container for up to three days or freeze for three months.
