Base Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 3 tbsp butter melted
  • 4 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon sliced
  • fresh parsley chopped, for garnish

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Pat chicken thighs dry with paper towels. Rub with olive oil, then season with paprika, thyme, salt, and pepper on all sides.
  • In a small bowl, mix melted butter with minced garlic. Brush half of this garlic butter mixture over the seasoned chicken thighs.
  • Arrange the thighs skin-side up on a baking sheet, leaving space between them. Bake for 35–40 minutes, or until internal temperature reaches 165°F (74°C).
  • Remove from oven and immediately brush with the remaining garlic butter. Tuck lemon slices around the chicken and let rest for 5 minutes.
  • Sprinkle with fresh parsley and serve with roasted vegetables, rice, or mashed potatoes.

Notes

Boneless, skinless thighs can be used and cook in 25–30 minutes. Try adding a pinch of chili flakes for heat or honey for a sweet-savory twist. Great for meal prep and leftovers.
