  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs / 700g)
  • 1/2 cup basil pesto (about 120ml, homemade or store-bought)
  • 1 pint cherry tomatoes (about 300g, halved)
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic (minced)
  • Salt and freshly cracked black pepper to taste
  • 1 tablespoon freshly squeezed lemon juice
  • Parmesan cheese optional for garnish

Instructions
 

Preparation

  • Preheat your oven to the temperature specified in the original instructions.
  • In a mixing bowl, combine the basil pesto, minced garlic, salt, freshly cracked black pepper, and lemon juice.
  • Place the chicken breasts in a baking dish and pour the pesto mixture over them. Use a spoon to coat each piece thoroughly.
  • Add the halved cherry tomatoes around the chicken in the baking dish.
  • Drizzle the extra virgin olive oil over the tomatoes and chicken.

Cooking

  • Place the baking dish in the preheated oven and cook until the chicken is cooked through and no longer pink in the center.
  • Once done, garnish with Parmesan cheese if desired.

Notes

Serve with a simple green salad, over rice or pasta, or enjoy the leftovers in an omelette or frittata. For best results, ensure chicken is at room temperature and use a meat thermometer. Store leftovers in an airtight container.
