  • 1 lb Ground Chicken (92/8) (or ground turkey) Choose ground turkey for a leaner option.
  • 1/2 Tbsp Chili Oil (or oil of your choice) Any cooking oil can be used.
  • 1/2 C Swerve Brown Sugar (or dark brown sugar)
  • 1/4 C Buffalo Sauce Adjust amount for desired spice level.
  • 2 Tbsp Cider or Rice Vinegar
  • 1 tsp Ground Ginger
  • 1 tsp Garlic Powder
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Red Pepper Flakes Adjust for spiciness preference.

Instructions
 

Preparation

  • Heat a skillet over medium-high heat with the chili oil until it shimmers.
  • Add the ground chicken to the skillet and brown for 3-4 minutes on each side, breaking it into smaller pieces with a spatula.
  • In a mixing bowl, whisk together the Buffalo sauce, cider or rice vinegar, Swerve brown sugar, garlic powder, ground ginger, kosher salt, black pepper, and red pepper flakes.
  • Once the chicken is fully cooked, pour the sauce into the pan. Stir and cook for an additional 2-3 minutes until the sauce thickens.
  • Serve the Firecracker Ground Chicken garnished with sliced scallions and toasted sesame seeds.

Notes

This dish pairs well with rice or cauliflower rice. For additional texture, consider adding vegetables during cooking. Leftovers can be stored and reheated easily.
